Glazed Fresh Apple Cake

I've had several people express an interest in this cake, so it's time to share it with everyone. It is absolutely delicious and I love making it. You can use your choice of apples, the one kind I don't use are granny smith apples. I also shred my apples instead of dicing them.

Cake:
2 cups sugar
1-1/4 cup oil
3 eggs
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla extract
2 teaspoons ground cinnamon
3 to 4 apples, peeled and diced
1 cup chopped pecans

Combine sugar, oil, and eggs in a large mixing bowl; beat well. Combine flour, salt, and soda; add to sugar mixture, beat well. Stir in vanilla, cinnamon, apples, and pecans. Batter will be stiff, so using a spoon to mix is a good idea, or use your hands to mix it all together. Spoon batter into a greased 13x9x2 inch baking pan. Bake at 325 degrees for 45 to 60 minutes. Cake is done when firm to touch. Drizzle glaze over warm cake.

Glaze

1/2 cup margarine
1 cup brown sugar, firmly packed
1/4 cup evaporated milk
1 teaspoon vanilla extract
1/2 teaspoon maple flavoring

Combine all ingredients in a heavy saucepan. Bring to a boil and cook, stirring constantly for 5 minutes. Turn heat down to low and beat about a minute with a spoon. Pour over hot cake.
